here is hector’s take ROSE’S heavenly CAKES: No-Bake Whipped Cream Cheesecake (page 257).
this is a coffees of hawaii version. replace the creme fraiche and the lemon juice with espresso shots, by weight.
for the sweeter tooth, i would suggest topping this coffee cheesecake with a generous sprinkle of turbinado sugar or with a caramel butterscotch sauce.
That looks amazing. Just like one of those marshmallow and graham cracker cookies minus the chocolate coating. I wonder if you could coat it with chocolate to go with the coffee? Another triumph!

M, who would have thought that we could do an upside down cheesecake! this gelatin based no-bake cheesecake freezes perfectly, so do it and then pack the crust.
the texture on the unmolded cheesecake is melted cake dripping down. leave the pan on hot water for a good minute. yes, unmold this frozen.
