ROSE’S heavenly CAKES: Chocolate Tomato Cake with Mystery Ganache (page 87), hector’s take #2:

this is a miniature tiered cake: a single layer 9″ tier, a two layer 6″ tier, and a single layer 3″ which came about from cutting the center of the 9″ tier.  the frosting amount was not increased, there was a spoon full of extra frosting :=)

the perles are valrhona.  the big perles are ghiraldelli.

    I’ve followed you blog for a while now – must say, your skills are incredible!

    A couple of question, if you wouldn’t mind sharing your experience:
    How exactly do you stack such a cake as this one above?

    Did you need dowels and cake boards for each layer (as when stacking large wedding-size cakes)?

    And how would you cut this cake? remove the tiers, then cut each tier into servings?

    I’m an experienced home baker, but want to try my hand at stacked/tiered cakes, both large size and “smaller” like your above.

    1. A, thx. yes, I use dowel rods or straws and separator plates or cardboard rounds for all tiers including the smallest. sure, such small cake isn’t heavy to stack, but it will be level!
